# Expert Tips:

01 -
  • No baking required, just a food processor and your hands—snacks don't get easier than this.
  • The hojicha gives you a sophisticated, slightly earthy flavor that tastes like you know what you're doing in the kitchen.
  • They're naturally vegan and gluten-free without tasting like deprivation, just clean energy.
02 -
  • Dates vary wildly in moisture depending on their age and storage—if your batch seems too dry, water is your friend, but add it gradually so you don't overshoot into gumminess.
  • Cold hands make rolling easier, so keep a damp cloth nearby and don't skip the refrigeration step or your balls might collapse at room temperature.
03 -
  • If you're nut-free, sunflower seeds and pumpkin seeds work beautifully as a direct swap—they'll add an earthier, slightly savory note that still works with the hojicha.
  • Make a double batch and freeze half; they're perfect to pull out when you need something substantial but not heavy, or when you want to look impressive without last-minute effort.
