07 - 1/2 cup black olives, sliced
08 - 2 cups romaine lettuce, chopped

→ Toppings

09 - 2 cups nacho cheese Doritos, coarsely crushed
10 - 1 cup shredded cheddar cheese
11 - 1/4 cup fresh cilantro, chopped

→ Avocado Ranch Dressing

12 - 1 ripe avocado, peeled and pitted
13 - 1/2 cup mayonnaise
14 - 1/4 cup sour cream
15 - 1/4 cup buttermilk
16 - 2 tablespoons fresh lime juice
17 - 1 garlic clove, minced
18 - 1 tablespoon fresh dill, chopped
19 - 1 tablespoon fresh parsley, chopped
20 - 1/2 teaspoon onion powder
21 - 1/2 teaspoon salt
22 - 1/4 teaspoon black pepper

# How To Make:

01 - Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain in a colander and rinse under cold running water until completely cooled.
02 - Transfer the cooled pasta to a large mixing bowl. Add cherry tomatoes, black beans, corn, red bell pepper, red onion, black olives, and romaine lettuce. Toss gently to combine.
03 - In a blender or food processor, combine avocado, mayonnaise, sour cream, buttermilk, lime juice, minced garlic, dill, parsley, onion powder, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
04 - Pour the avocado ranch dressing over the pasta mixture. Using salad tongs or a large spoon, toss gently until all ingredients are evenly coated.
05 - Sprinkle shredded cheddar cheese and fresh cilantro over the dressed salad. Toss once more to incorporate.
06 - Immediately before serving, top the salad with crushed Doritos to maintain crunchiness. Serve right away or refrigerate without the Doritos for up to 4 hours. Add Doritos just before serving.

# Expert Tips:

01 -
  • It tastes indulgent and fun while actually being packed with fresh vegetables and real nutrition.
  • You can prep it ahead, which means you're not stuck in the kitchen when guests arrive.
  • The avocado ranch dressing is so creamy and bright that it elevates everything it touches.
  • Kids and adults genuinely fight over the last bite, no exaggeration.
02 -
  • Add the romaine and Doritos as close to serving time as possible, or they'll wilt and lose their crunch faster than you'd expect.
  • The avocado dressing tastes better the next day as the flavors meld, but make it fresh on the day you serve it because avocado doesn't stay bright green.
  • If the dressing seems too thick, don't panic, just thin it with more buttermilk rather than adding water.
03 -
  • Toast the Doritos in a dry skillet for 30 seconds before crushing if you want them even crunchier and more flavorful.
  • Make extra dressing because people will want to drizzle it on the side, and you'll want leftovers for dipping vegetables.
