Place rounds on prepared baking sheet. Bake for 12-15 minutes or until lightly golden. Cool completely on a wire rack.

While shortcakes cool, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

To assemble: cut cooled shortcakes in half horizontally. Thread a bottom half, a strawberry half (cut side down), a spoonful of whipped cream, another strawberry half (cut side up), and the top shortcake half onto each skewer. Repeat for all skewers.
